Mismatch customer data

I noticed an issue today where a guest placed an order using apple pay, however the email confirmation was sent to another email (not his email). Upon checking, we noticed that the email it was sent to was an email that was signed up for the woo coupon box plugin a few days ago. He used apple pay. Very worrying, and I’m trying to figure out why this may have happened.
Stripe captured his correct email address, but WooCommerce captured a random email address from a few days ago that used woo coupon box.
Any ideas would be greatly appreciated.
