checkout to orde-received slow

When we add product to our basket, move to checkout with form and details order and then click to confirm our order on /checkout/order-overview it often is very slow. It seems to hang on processing our order.

We are trying to deal with this issue and so are trying to debug. We already turned off WP Rocket Cache and Imagify on live site but it does not matter. Object Caching is still on, but we would think that would only help. We are working on more tests on staging also, but no luck yet.

order-overview sometimes loads slowly in 2.6-10 seconds , sometimes right away too (less than 2 seconds). It is not always slow. Difference between one or two products however should not matter that much I would think.

Any recommendations on how to debug this?
