Backend and App show ‘paid’ from beginning

I installed the plugin, it is working. I learned after some time that wc email will not work if the chosen ‘default order status’ is set on ‘payment pending’. It is necessary to set it on ‘order is processed’.
But then the backend and the app show the payment status as “paid” from the moment of ordering. This is a bit premature (and confusig for the user) because we have ‘cash on pickup’. Could that payment status indication be postponed until order is closed? Is that already possible or did I miss something?
