WordPress deleting my posts

Difficult to say. Perhaps another plugin that automatically purges old posts or something? Try to click the date and time of the event and see if any more useful information shows up.

I can see that the deletion is done when WP-Cron is running, so my best guess is that a plugin is deleting posts during a scheduled tasks. Check your plugin list and see if any of your plugins has some kind of deletion/archive function or similar.

You can also install a plugin such as WP Crontrol to see what tasks are scheduled to run and perhaps get a clue regarding what plugin is causing this.
