Change default order status

Changing the status of the order is not something that’s specific to the PayPal plugin or any gateway. You can control the order’s status by using the WooCommerce filter woocommerce_payment_complete_order_status to control the order’s status after payment is completed.

Example:

add_filter('woocommerce_payment_complete_order_status', function($status){
    return 'completed';
});

WooCommerce set’s digital goods to “completed” and shippable products to “processing” be default.
