If I understand you correctly, you want to de-select the default shipping and payment methods on checkout. You can start with this guide.

You can add the snippet to your functions.php file or use a plugin like Code snippet.

The shipping hook works fine on my test site. As for this hook 'pre_option_woocommerce_default_gateway' , you’re right it was deprecated a long time ago.

According to this thread, there is no new hook to work with. I advise you to check the JavaScript workarounds provided there.

in the payment method – do you know if its possible to have NOT JUST the radio buton/or the text like (pay with card) that extends the “form” but the WHOLE button?
