    e.g. I have a category that has a Stripe Payment Gateway.
    I have others that require a quote for shipping before the sale is processed!

    Yes, you can add the rules like if the cart contains the products from the Clothing categories then enable/disable the Stripe payment method but this feature not available in the light version.
