From what I gather, this is not part of the core WooCommerce functionality.
On a test site of mine (direct link here, available for another day or so), with only the Storefront theme and WooCommerce plugin active, I could see the SKU for the variable product and, subsequently, the SKU would change -depending on the selected variation.
Therefore, the issue appearing at your site, points to a theme or plugin issue. We could investigate a bit further for you, therefore feel free to share a copy of your site’s System Status. You can find it via WooCommerce > Status. Select Get system report and then Copy for support.? You can either paste it in your response here, or use https://pastebin.com/ for pasting it there and sharing it with us.
