The current layout with all options displayed at once is ideal because it gives an overview of all options, and the customer can easily decide which one to use.
Unless you have more than 10 different shipping methods available to the same order, I would not recommend using a dropdown.
Unfortunately, making this change would fall into customization work and is not covered by the plugin support.
