I was able to send the form correctly, but in the second attempt. The notice I received the first time was highlighted in orange, that means that the error is happening because the submission was detected as spam. See: https://contactform7.com/faq/after-submitting-the-form-i-get-an-error-message/

However, this is not clear to most visitors, so you may prefer to use reCAPTCHA v2 that explicitly displays the Captcha checkbox in the message. If so, the easiest way I know to enable reCAPTCHA v2 in CF7 is using this plugin (which is the one recommended by the plugin author): ReCaptcha v2 for Contact Form 7

So my original post was wrong. It turns out autoptimize is causing the issue.
