I’m going to answer your questions one by one as follows ??
I want to set it up so that the job listings do not show up in a wordpress search. I have a dedicated page for all the job listings and I don’t want the jobs to show up when a user uses the search field in the rest of the site.
Job Listings are custom post types, so if you want to exclude job listings from your general site search, you will need to create a custom search that does not include this custom post type. This goes a bit out of our scope of support, however, I found some information from third-party sites that can be helpful for you:

I have also noticed that I can search expired job postings which I also do not want to happen.
Can you double-check that you have these two relevant options unchecked (see in the screenshot linked below) on the Job Listings -> Settings -> Job Listings page in your dashboard?
