Add custom attribute to Schema

You can use the Schema filter to change the GTIN value:

Example code:

add_filter( 'rank_math/snippet/rich_snippet_product_entity', function( $entity ) {
    $entity['gtin8'] = 'Rank Math';
    return $entity;
}, 11 );
