Right now, only certain emails can be disabled on the dashboard of GiveWP. The ones containing a lock cannot be deactivated. I’ve passed your request as a feature request to the product development team, so they can analyze the viability and feasibility of this feature.

If you want to take a look at the hooks you can use, you can start from /wp-content/plugins/give/includes/admin/emails/class-donation-receipt-email.php. There you’ll see some hooks you can use to customize it.
