Orders skip Processing and fo straight to complete

Hi,
This is opposite to the usual issue reported.
I have variable and simple products (not virtual or downloadable, and neither of those boxes are ticket) so when an order is made, I expect the status (and email) that goes out to be ‘Processing’ ready for a manual change to ‘Completed’ once shipping has been made.
Instead, the status is straight away going to ‘Complete’ and the complete email is being sent to the customer.
Hunted high and low to see if I’ve accidentally coded this or checked something, but I havent, any idea why this is occuring?
