Thank you for the reply, and link, but I was looking for a non-plugin solution. The translate solution you’ve put forward may very well work but it’s a workaround.

Ideally, I’d like to modify the child theme to set/customize the single line of text as I have with other elements.

Is there a way to “disable” Woostify from editing the Woocommerce text in the first place? Then I can edit the woocommerce field easily enough.

We have released a new version that supports the filter for this part.
You can use the code below in your child theme to custom the text.

add_filter( 'woostify_stock_message', 'custom_stock_message' );
function custom_stock_message(){
    $stock_message = __( 'Hurry123! only %s left in stock.', 'woostify' );
    return $stock_message;
}
