Processing Days Not Applied Correctly

Hi and thanks for the great plugin. Been using it for these past few months and am very happy with it.
However since the last update I am having an issue with the processing days not being applied correctly. The plugin is set up to apply 2 processing days to any order but for some reason it is not doing so and allowing clients to book a delivery date before that.
The perplexing thing is that I cannot replicate it on my devices. When I test from laptop, phone etc I always find that it is working properly.
Any advice as to how to troubleshoot this please?
