Adding & Removing Columns from Admin Tax table

I am having trouble navigating the Woocommerce documentation. I am creating a plugin, and need to be able to customize some of the admin tables, for example Tax Rates and Customers.

They do not seem to be using the default WordPress admin code. Can someone point me in the direction of documentation on how to hook into and modify these tables?
