Custom line of text manually added on invoice

I’d like to add a Serial Number of the Product on invoice manually. A serial number would not be known before the purchase is made, only when the product finally goes out to the customer. Is this possible please?

You could use the Invoice Notes for that:
Alternatively you could use the ACF plugin to create the custom field for the order, and then push it to the Invoice following this guide: Displaying custom fields
