Problem with excerpt containing link to video

I’m building my first WordPress website and it is not online yet.
I want to create a classic post grid that shows posts from one category with a short excerpt. I have no issues when the post does not contain links videos. However, if my post is very short and it contains a link to a Youtube video, the excerpt spells out the link (the excerpt starts with “https://www.youtube.com/watch?%5Blink to video]” and the actual text excerpt follows). I obviously don’t want the grid to display the link.
Also, I would like the image of the post to be a screenshot from the video. Can that be easily done?
For the time being, I can remove the excerpt but I would really prefer to have excerpts for each post in the grid.

You can set a custom excerpt for your post without a video link.
