Problems with completing orders & PayPal charging client

Hi I’m new to Woocommerce and online retailing
I’ve set up a very small store – 2 virtual products – and been testing the payment collection.
With Stripe I can see the money in my Stripe account. The order says that payment has been received but the order is shown as Processing rather than completed
With PayPal, the money is taken from the Customer’s account but isn’t appearing in my PayPal business account. Initially I had the wrong email address in Receiver Email and got a message
Validation error: PayPal IPN response from a different email address (wrong email). Order status changed from Pending payment to On hold.
I corrected the setting and now when an order is paid for through PayPal, the order goes on hold and I get this message
Payment pending (unilateral). Order status changed from Pending payment to On hold.
The customer’s PayPal account has been debitted but there’s nothing in my business PayPal account and the order is shown as on hold.
So 2 questions:
1. Why doesn’t the order show as completed once the money is recorded as having been received?
2. Why is PayPal taking the money from the customer but not crediting my account?Havr I missed some set up step?
