For Query 1:
Please go to Menus of the Customize from Dashboard and Create New Menu from there, as instructed here: https://docs.themegrill.com/cenote/#section-3

PS: By ticking in header top one can add a menu in the top header.

For Query 2:
Please add the following CSS code in Additional CSS box:

.cenote-header-sticky .main-navigation li a {
color: #000; //Use desired color
}

PS: This will help you to change the menu color while moving up.

For Query 3:
To get the result as you desired, you can follow the below steps:

Go to Appearance > Customize > Theme Options > Layout section
Choose the Full-width content layout from the Archive/Blog Layout options
After you have selected the layout, you can click on the Publish button to save the changes on the site.

PS: By selecting the layout option one can extend the image but it won’t be full-width end to end as it won’t look good on a site but if you want it can be achievable.
