Mailchimp lists, transactional emails and segments data

    Hi, I’m selling a school holiday program course via woo-commerce.
    First variable is Select Program (has 3 options), Second variable is Materials (has 3 options). I would be using Mailchimp to send both transactional emails and other special offer/marketing emails.

    The person who purchases the course would fill in their email and name at the time of placing an order via woo-commerce, he will be then sent a link to fill a separate course form (form created via CF7 or gravity forms), the form fields are again sent to Mailchimp (This info is used to send emails regarding their upcoming course, updates and special offers)

    The goal is that the information received from checkout order form and the information from the course form should be attached to the right customer’s profile, so ideally if someone fills the course form after purchasing the course, Mailchimp should update their new information on their existing profile automatically.

    Question 1.
    Where should I use the consent checkbox at the checkout page? Should I use it on checkout page via “mailchimp for woo-commerce plugin” or via course form or both? Would this enable Mailchimp to update the information if they find the email address exists in the list?

    Question 2.
    Out of two only one product variant is showing in the Order Notifications email.

    Product variant information for Select-program = is blank, doesn’t appear.

    Question 3.
    Unable to create segment based on the variable of the product, no option is found in segments.

    The e-commerce merge tags are not seen in the audience fields, can I add them so it displays in the audience dashboard/ audience fields
    Like *|ORDER_NUMBER|*, *|PRODUCT_TITLE|* *|PRODUCT_VARIANT_TITLE|* etc
