What does the server error log say?

Unfortunately, the logs are blank so I don’t have that info.

Look if your wp catches the serever errors in …/wp-content/debug.log
You should have a description of the (fatal) error, othewise it is searching a needle in a haystack.

This should get you running again, then do as Jacob says.

I tried all of that and none of it worked, unfortunately. I’ve contacted the web host to try to get a copy of the error log files.

If you want to re-install the plugin:

You can de-activate and delete the plugin without any problems.
You can ignore the wp warning, nothing will be lost. No albums, settings, photos or any other data.

Just do it and install the plugin on the Plugins -> Add New admin page as if it is a new plugin.
