Mobile version of Theme Not always loading

This problem is back again. I have tried removing various plug-ins to no avail. Here is the problem: I have been having this issue intermittently for some time. My plugins are all up-to-date. Yet, some days the mobile version of the Hitchcock theme does not load. Only a generic wordpress theme appears on Mobile devices. There is a link at the bottom of this generic theme to “Load the full site.” The theme will load if that is selected. If I go the settings in the browser, check the box next to The desktop theme, that loads just fine. I have checked all the plugins. All are updated. I have disabled them one by one to no avail. I am puzzled. This is happening on both Android and IOS devices. My site is very simple with just a few galleries. The hosting company can only suggest that I use a different theme. (Not an acceptable answer) My hosting company is Dreamhost. Can anyone help?
