How edit default field billing and shipping

I am build a page address. This is page have fields billing and shipping. Then , after i click button go to checkout page then it ajax load page checkout custom. I did to hook function with filter hook is name woocommerce_customer_taxable_address. Infor address tax change. But caculator tax is returned array empty. If i not using ajax, it work. Pls help
