Custom Post Templates

I am trying out Custom Post Templates, but it doesn’t really do what I want. Is there anything that will allow me to create a template that I can choose for Postings that can be edited? As in…you can fill in the blanks in a table or replace existing content. From what I see Custom Post Templates is more like a static shell that cannot be altered from within the Post menu.
