How can I have the empty email field?

    Hello.
    I do not sure that clearly understand your question. But probably you are having auto-filling the email field by administrator email, when you logged in.

    So in this case, please open the Booking > Settings General page and in Form section deactivate this option “Auto-fill fields”.
    Then Save changes.
