    I have an issues whereby, All notification emails are being sent except the Confirmed Email notification.

    My apologies, worked out the problem.

    The email address I was using as the customers email was the same as the Site admin email address. Even though the Restaurant Reservations Admin Email Address was set to a different email address than the Site admin email address and customers email were the same, therefore Confirmed Email was not received.
