Viewing other users courses

I’m creating a course as an admin, but I want the course to be editable by other roles I define. If I assign the Instructor role that doesn’t let them see/edit the course I created. I tried to install a couple different capability management plugins to edit the permissions for the Instructor role, but I don’t see a way to assign that permission.

How can I let someone else edit the course as needed without giving them admin rights?
