Control amount of text for post excerpts

  • My homepage is my blog with posts displayed in a grid. I also have category pages that display posts in a grid. The size of the text excerpt for posts is overly long. Is there a setting/option that lets me control how many words etc will show when posts are being displayed in a grid? I feel like I am missing something basic here.
